Low Calorie Vegetarian Recipes

Strawberry Shortcake

Ingredients:

  • 3 cups of ice cold skim milk

  • ½ eight-ounce bar of LIGHT cream cheese

  • 3 cups of strawberries, washed and stemmed

  • 4-6 ice cubes

  • 1-3 packets of Splenda or Equal if extra sweetness is desired

  • ½ a small container of whipped topping

  • Strawberry syrup, if desired 

How To Make:

  • Reserve 1 cup of the strawberries.
  • Blend milk, cream cheese, remaining strawberries, sweetener and ice until smooth and frothy.
  • Pour in rest of strawberries and blend slightly so that your shake will have some chunky strawberries inside.  
  • Pour mixture into chilled glasses.   Divide up the whipped topping evenly into the mixture and GENTLY stir to incorporate. Drizzle on a bit of strawberry syrup if desired.
