Asian Rice Salad

Ingredients:

  • 2 cups cooked rice

  • 1 small red onion, diced

  • 1 cucumber, diced

  • ½ red capsicum (bell pepper), diced

  • 2 sticks celery, diced

  • 100 g spinach leaves, chopped

  • 2 tbs coriander, chopped

  • Cracked pepper

  • 2 tbs sesame seeds, toasted

  • ¼ cup teriyaki sauce

  • 1 tbs brown sugar

  •  Shallots to garnish


How To Cook:

  • Combine rice, onion, cucumber, red capsicum and celery. Stir through spinach leaves and coriander.
  • In a jug, combine sesame seeds, teriyaki sauce and brown sugar
  • Pour dressing over salad and stir well. Top with shallots. Serve.
