Ingredients:

Cooking oil
spray

1 onion,
diced

2 tsp ground
cumin
-
1 tsp ground
coriander

2 cups cubed
butternut pumpkin

400 g can
chopped tomatoes

1 cup water
or vegetable stock

1 zucchini,
chopped

100 g green
beans
-
Salt and
pepper
-
1 cup orange
juice
-
1 cup
couscous
-
2 tbs
coriander, chopped

1 tbs mint,
chopped
How To Cook:
-
Heat a large saucepan
to medium heat, spray with oil and add onions, stir for 2
minutes. Add cumin and coriander. Cook for 2 minutes until
spices are fragrant.

Stir through the
pumpkin, tomatoes and water. Cook for 10-15 minutes, or until
pumpkin is tender. Add zucchini and green beans, cook for 5
minutes. Season with salt and pepper.

Heat orange juice in
microwave for 1 minute, or until hot. Pour over couscous and
cover with plastic wrap. Let steam for 5 minutes. Serve with
pumpkin ragout and garnish with coriander and mint.
