Low Calorie Vegetarian Recipes

Pumpkin Ragout

Ingredients:

  • Cooking oil spray

  • 1 onion, diced

  • 2 tsp ground cumin

  • 1 tsp ground coriander

  • 2 cups cubed butternut pumpkin

  • 400 g can chopped tomatoes

  • 1 cup water or vegetable stock

  • 1 zucchini, chopped

  • 100 g green beans

  • Salt and pepper

  • 1 cup orange juice

  • 1 cup couscous

  • 2 tbs coriander, chopped

  • 1 tbs mint, chopped


How To Cook:

  1. Heat a large saucepan to medium heat, spray with oil and add onions, stir for 2 minutes. Add cumin and coriander. Cook for 2 minutes until spices are fragrant.
  2. Stir through the pumpkin, tomatoes and water. Cook for 10-15 minutes, or until pumpkin is tender. Add zucchini and green beans, cook for 5 minutes. Season with salt and pepper.
  3. Heat orange juice in microwave for 1 minute, or until hot. Pour over couscous and cover with plastic wrap. Let steam for 5 minutes. Serve with pumpkin ragout and garnish with coriander and mint.
