Ingredients:

4 Roma
tomatoes
-
1 clove
garlic, sliced thinly

¼ cup basil
leaves, chopped

¼ cup
balsamic vinegar
-
1 bunch
rocket leaves
-
100 g low
fat feta cheese, cubed
Dressing:
-
¼ cup red
wine vinegar
-
2 tbs
chives, chopped
-
1 tsp seeded
mustard
-
1 tsp olive
oil
How To Cook:
-
Preheat oven to 180
C. Line a tray with baking paper. Cut tomatoes in a half and
lay onto tray cut side up. Sprinkle with garlic, basil leaves
and balsamic vinegar. Roast for 20 minutes till tomatoes are
soft. Set aside.

To make a dressing,
combine red wine vinegar, chives, seeded mustard and olive oil.
Whisk with a fork.

Arrange rocket leaves
on a serving platter and top with roasted tomatoes and feta.
Drizzle with the dressing and serve.
