Low Calorie Vegetarian Recipes

Roasted Tomato & Feta Salad

Ingredients:

  • 4 Roma tomatoes

  • 1 clove garlic, sliced thinly

  • ¼ cup basil leaves, chopped

  • ¼ cup balsamic vinegar

  • 1 bunch rocket leaves

  • 100 g low fat feta cheese, cubed

 Dressing:

  • ¼ cup red wine vinegar

  • 2 tbs chives, chopped

  • 1 tsp seeded mustard

  • 1 tsp olive oil


How To Cook:

  1. Preheat oven to 180 C. Line a tray with baking paper. Cut tomatoes in a half and lay onto tray cut side up. Sprinkle with garlic, basil leaves and balsamic vinegar. Roast for 20 minutes till tomatoes are soft. Set aside.
  2. To make a dressing, combine red wine vinegar, chives, seeded mustard and olive oil. Whisk with a fork.
  3. Arrange rocket leaves on a serving platter and top with roasted tomatoes and feta. Drizzle with the dressing and serve.
